GREEN ENCHILADA SAUCE
Have some extra jalapeños, serranos and tomatillos in your fridge and need a quick delicious recipe for them? Boil them up and blend them with a few other ingredients for a delicious green sauce perfect for enchiladas!

INGREDIENTS
- 8 Veg-Fresh tomatillos
- 3 Veg-Fresh serrano peppers
- 2 Veg-Fresh jalapeños
- 1/4 of an onion
- 2 garlic cloves
- 1 bunch of cilantro
- Avocado oil
- Chicken Bouillon
- 1/2 cup of sour cream
- 1/2 block of cream cheese
DIRECTIONS
- In a large pot you will bring water to a boil. Once boiling add the onion, serrano peppers and jalapeño peppers. Cook for about 5 minutes.
- Add the tomatillos and let cook until they change color (about 5 minutes) – be careful not to overcook the tomatillos!
- In a blender, add the cooked tomatillos, serrano peppers, jalapeños, onion as well as garlic, cilantro, cream cheese, sour cream and some chicken bouillon. Blend until well combined. You can taste for seasoning here and add more chicken bouillon or salt as needed.
- Heat oil in a pan over medium heat and pour the green sauce into it. Let the sauce simmer for about 5-10 minutes.
- Now you can use the sauce to pour over some enchiladas! Enjoy!
