JULIENNED ZUCCHINI & YELLOW SQUASH WITH THYME

INGREDIENTS
- 1 Good-Life Organic™ Zucchini - julienned
- 1 Good-Life Organic™ Yellow Squash - julienned
- 1/4 Veg-Fresh Red Bell Pepper - julienned
- 2-3 sprigs of fresh thyme
- Extra virgin olive oil
- Minced Garlic
- Minced Shallot
- Lemon Juice
- Red Pepper Flakes
- Parmesan Cheese
- salt and pepper, to taste
DIRECTIONS
- Heat olive oil, garlic and shallot in a pan over medium heat
- Add in the squash and red bell pepper to cook
- Add the fresh thyme and some lemon juice
- Mix everything together
- Finish off with salt, pepper and red pepper flakes to taste and sprinkle some parmesan cheese
- Enjoy!
