JULIENNED ZUCCHINI & YELLOW SQUASH WITH THYME

INGREDIENTS

  • 1 Good-Life Organic™ Zucchini - julienned
  • 1 Good-Life Organic™ Yellow Squash - julienned
  • 1/4 Veg-Fresh Red Bell Pepper - julienned
  • 2-3 sprigs of fresh thyme
  • Extra virgin olive oil
  • Minced Garlic
  • Minced Shallot
  • Lemon Juice
  • Red Pepper Flakes
  • Parmesan Cheese
  • salt and pepper, to taste

DIRECTIONS

  1. Heat olive oil, garlic and shallot in a pan over medium heat
  2.  Add in the squash and red bell pepper to cook
  3. Add the fresh thyme and some lemon juice
  4. Mix everything together
  5. Finish off with salt, pepper and red pepper flakes to taste and sprinkle some parmesan cheese
  6. Enjoy!
