CROSTINI RICOTTA CHEESE CANTALOUPE JAM
- 1 Good Life Organic cantaloupe, coarsely chopped (about 4 cups)
- 1 cup sugar
- 1/4 cup fresh lemon juice
- 1/4 cup honey
- 1 tsp kosher salt
- 1 tsp powdered pectin
- Bring 1/2 cup water and cantaloupe to a boil in a medium sauce pan. Use a potato masher to smash cantaloupe as it softens. Add lemon and sugar and bring to a boil – stirring consistently. Continue stirring and cook for 15-20, until it thickens. Stir in honey, pectin, and salt – bring to a vigorous boil for 2 minutes. Let jam cool in the sauce pan, then place in a glass mason jar, cover, and chill.
- Serve on crostini with ricotta cheese or on a simple piece of toast. This jam can be used in the place of jam in any recipe.
